Yumm Yumm in my Tum Tum

Can I just tell you how much I love cooking right now! I'm trying new things, making up my own and reusing old recipes all the time now! here is the one I'm trying tonight, it's from The America's Test Kitchen Family Cookbook and it's their Banana bread recipe . 

I am so excited! Now I know that there are SO many out banana bread recipes out there but tell me honestly who doesn't love trying a twist on things? I made their regular kind but you can try their variations also.

Here it is:
2 cups all-purpose flour
3/4 cup sugar 
3/4 tsp baking soda
1/2 tsp salt
3 very ripe bananas, mashed
3/4 stick butter, melted
2 large eggs, beaten
1/4 cup plain yogurt
1 tsp vanilla extract
1/2 cup chopped walnuts (optional, I didn't use them)
I added a tsp of cinnamon 

and here are the steps:
1. adjust an oven rack to the lower-middle position and heat the oven to 350 degrees. Coat a loaf pan with oil spray.
2. Whisk together flour, sugar, baking soda, ans salt in a large bowl. Whisk  the mashed bananas, melted butter, eggs, yogurt, and vanilla in a separate bowl. Gently fold the banana mixture into the flour mixture with a rubber spatula until just combined. Fold in nuts (if using). Batter will be thick and chunky.
3. Scrape the batter into the prepared loaf pan and smooth the top. Bake until golden brown and a toothpick comes out clean (about 55 minutes )
4. Let the loaf cool in the pan for 10 minutes before unmolding onto a wire rack to cool for 1 hour.

It comes out so moist! Enjoy!
